French Toast

Prep Time: 10 min | Cook Time: 15 Min | Yield: 8 Servings 

  

Ingredients 

For the French Toast 
  • 1 loaf or 8 pieces of cinnamon bread 
  • 2 eggs 
  • 2 tablespoons almond milk 
  • 1 tablespoon cinnamon 
  • ½ teaspoon nutmeg 
  • Pinch of salt 
  • 2 tablespoons of coconut oil 

  

For the Blueberries 
  • 1 tablespoon of coconut oil 
  • 1 cup of fresh blueberries, washed 
  • 2 tablespoons almond milk 
  • 1 tablespoon of honey 

  

Instructions 

For the French Toast 
  • In a bowl, whisk together the eggs, milk, and spices
  • Soak each piece of cinnamon bread in the mixture for 1 minute
  • Add the coconut oil to a large pan
  • Melt the coconut oil over medium heat, then add the bread
  • Cook each piece of bread for 3-5 minutes, then flip and cook until golden
  • Repeat with the rest of the bread

  

For the Blueberries 
  • Add the coconut oil to a medium-sized saucepan and melt over medium-high heat
  • Once melted, add the blueberries, almond milk, and honey
  • Cook until the mixture begins to bubble, then reduce the heat to low
  • Cook on low for 10 minutes, stirring occasionally
  • Finally, serve the blueberries over the French toast with maple syrup
