Ingredients
For the French Toast
1 loaf or 8 pieces of cinnamon bread
2 eggs
2 tablespoons almond milk
1 tablespoon cinnamon
½ teaspoon nutmeg
Pinch of salt
2 tablespoons of coconut oil
For the Blueberries
1 tablespoon of coconut oil
1 cup of fresh blueberries, washed
2 tablespoons almond milk
1 tablespoon of honey
Instructions
For the French Toast
In a bowl, whisk together the eggs, milk, and spices
Soak each piece of cinnamon bread in the mixture for 1 minute
Add the coconut oil to a large pan
Melt the coconut oil over medium heat, then add the bread
Cook each piece of bread for 3-5 minutes, then flip and cook until golden
Repeat with the rest of the bread
For the Blueberries
Add the coconut oil to a medium-sized saucepan and melt over medium-high heat
Once melted, add the blueberries, almond milk, and honey
Cook until the mixture begins to bubble, then reduce the heat to low
Cook on low for 10 minutes, stirring occasionally
Finally, serve the blueberries over the French toast with maple syrup
