Marshmallow French Toast

Prep time: 10 minutes  |  Cook time: 15 minutes  | Yield: 4 servings

INGREDIENTS 

  • 8-10 slices of bread (we like French bread, brioche, or challah for extra doughiness) 
  • 4 eggs 
  • 1 c. milk 
  • 1 tbsp. sugar 
  • 1 tsp. cinnamon 
  • ½tsp. vanilla extract 
  • 4 c. marshmallows 
  • 2 tbsp. butter 
  • 2 tbsp. Nutella 
  • 2 tbsp. peanut butter

INSTRUCTIONS

  1. In a bowl, whisk together eggs, cinnamon, milk, vanilla, and sugar.
  2. Melt the butter in a large skillet over medium heat.
  3. Dip bread in the egg mixture until fully coated.
  4. Fry the bread until lightly browned (about 3 minutes on each side).
  5. Top each piece of French toast with marshmallows and place on a baking sheet.
  6. If you have a brûlée torch, use it to lightly toast the marshmallow tops (but don’t hold it too close!). 
  7. If you do not have a brûlée torch, broil the French toast until the marshmallow tops are golden brown.
  8. Melt Nutella and peanut butter in separate bowls. Microwave each bowl in 10 second intervals until melted. 
  9. Drizzle melted Nutella and peanut butter over French toast. Serve immediately.
