Instant Pot Split Pea Soup

Ingredients:

¼ c. olive oil

1½ white onion, diced

1½ c. carrots, chopped

1 c. celery, diced

1 tsp. pepper

½ tsp. salt

3 cloves of garlic, minced

1 bag of frozen peas

1 ham bone

4 c. vegetable broth

2 c. water

2 tbsp. paprika

Cooked ham for garnish

Croutons for garnish

Microgreens for garnish


Directions:

1. Set your Instant Pot to the “Sauté” setting, then add the olive oil, onions, carrots, and celery.

2. Sauté for 5 minutes, stirring occasionally to avoid burning.

3. Next, season with salt and pepper.

4. Then, add the minced garlic and peas.

5. Sauté for another 5 minutes, until the vegetables have softened.

6. Turn your Instant Pot to the “Stew” setting, and add the ham bone, veggie broth, water, thyme, and paprika.

7. Place the lid on the Instant Pot and turn until it locks.

8. Simmer on low for 30 minutes, then turn to release the steam.

9. Once all the steam is out, remove the lid and stir the soup.

10. Use a food emulsifier or blender to combine the ingredients.

11. Garnish with slices of ham and serve warm!
