Turkey Cranberry Meatballs

Ingredients:

Cranberry Sauce

  • 2 cans of cranberry sauce
  • 2 c. orange juice, no pulp
  • 1 tsp. ground cinnamon


Turkey Meatballs

  • 1 tsp. olive oil
  • ½ white onion, diced
  • 1 lb. ground turkey
  • 2 tsp. dried rosemary
  • 1 tsp. orange juice
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 c. breadcrumbs
  • Fresh parsley for garnish

Directions: 

Cranberry Sauce

1. Add the cranberry sauce to a large pot.

2. Cook over medium-high heat for 10 minutes, stirring occasionally.

3. Next, add the orange juice and cover to simmer for 15 minutes.

4. Turn the heat to low and cover again while you make the meatballs.


Turkey Meatballs

1. Add the olive oil and diced onion to a small pan.

2. Cook over medium heat until translucent, about 5-7 minutes.

3. Remove from heat and allow to cool for 5 minutes.

4. Once cooled, add to a large bowl with the ground turkey.

5. Add the orange juice, then sprinkle the seasonings over.

6. Next, add the breadcrumbs and use your hands to thoroughly combine the ingredients.

7. Then make 1” thick meatballs, and place the meatballs in the cranberry sauce.

9. Turn the heat to medium-low, cover and cook the meatballs in the cranberry sauce for 15 minutes.

11. After 15 minutes, rotate the meatballs. Then spoon the sauce over the meatballs and cook for another 10 minutes on low heat.

13. After 10 minutes, transfer to a serving dish and garnish with fresh parsley. Enjoy!
